Cacao VS Cocoa
The two ingredients comes from the exact same place: The Cacao tree, typically found in Africa ,South America, Asia and parts of North America. As the cacao trees grow mature and ripen they produce seeds called beans, pods and nuts.
Cacao refers to any product of the cacao plant that is raw.
Cacao (Unprocessed)
Cacao beans are harvested from the tree, and the beans are fermented to develop their flavour before being left to naturally dry in the sun. Chocolate makers have a choice between whether to roast the beans or use the raw beans. For Cacao products the raw beans are chopped and crushed to make a cacao liquid which is then cold pressed to separate the cacao butter from the cacao mass, which is then dried to form cacao powder.
Cocoa (Processed)
Cocoa on the other hand, comes from beans that have been fermented and then roasted at high temperatures rather than sun dried, destroying the natural nutrients lowering the mineral content.
